Seeni Sambol Is An Onion Relish Made With Lots Of Onions That Are Caramelized To Perfection ??????

It Is A Combination Of Sweet Sour & Spice
.
A Common SriLankan Breakfast Side Dish That Is Most Often Eaten With Kadey Paan,Hoppers Or Even Kiribath

It Is So Easy To Make:

You Will Need Need One Kg Sliced B Onions Mixed With A Tsp Salt,Tbsp Black Pepper Pwd,A Tbsp Kashmir Chilli Pwd,A Tbsp Of Chilli Flakes,A Tsp Turmeric & 2 Tbsp Maldive Fish Chips(Optional)

Heat Half A Cup Oil,Add Curry Leaves,5 Cardomoms,A Stick Of Cinnamon,& This Mixture Of Spiced Onions.Let This Cook On Low For Atleast 10 Minutes Covered.
Add In Tamarind Pulp
Then Open & Let It Cook Again For Another 10 Minutes On Low.

I Usually Avoid Adding Refined Sugar Into My Food So I Would Sprinkle A Tbsp Of Grated Jaggery,Just To Let The Onions Caramelize At This Point.
You Could Totally Avoid This Step If You Prefer & Want It A Sugar Free Seeni Sambol
.
Once You Have Gotten The Colour You Wil See The Seeni Sambol Is Ready.

This Can Be Stored In The Fridge For A Very Long Time.

TIME TO MAKE THE BUNS

FOLD THE TWO SIDES & THEN ROLL UP TO FIT INTO GREASED THE MINI LOAF PAN
SERVE WARM OR IF U WANT TO STORE LET IT COOL COMPLETELY & REFRIGERATE & REHEAT WHEN NEEDED
