Basbousa is a traditional Middle Eastern Sweet Semolina Cake.Baked to perfection and drenched with fragrant rose or saffron infused syrup….
Each region has its version but this is my simplified version.Learnt this from my sweet maid who lived for a very long time in the Middle East
Let’s Get Started
You will need
- Two Cups Semolina
- One Cup Dehydrated Coconut
- Two tsp baking powder
- One Cup Colourless Oil
- One Cup Heavy Cream
- One Cup Greek Yogurt
- Two Eggs
- Vanilla
- Saffron
- Cardomom Powder
Mix all the above ingredients in a bowl and make sure everything is well combined
Let the batter rest for 30 minutes

Transfer into a Buttered Oven Proof Dish
Level it and draw out a pattern of choice.I just tried something I saw online because these cakes are so pretty in diamond shapes.Decorate with Almond halves.
Bake in a preheated oven for atleast 20 minutes or until they’re beautifully golden.Mine got abit over done though this time.
Nevertheless the taste was still as good,infact we really enjoyed the crisp edges
Drench this baked semolina cake in simple syrup while it’s still piping hot…
Serve warm with a cup of flavoured Black Tea
This tastes delicious when served chilled with a dollop of fresh clotted cream.The light cream compliments the sweetness of the cake so well
