Cheesy Chicken Palandi on a Friday Night In !!!!

Definitely a winner in my home…
Remember the palandi plate from Pillawoos ??? This one’s definitely a match?? for days like today when you’re not comfortable leaving home with everything that’s going on these days….

Try it and lemme know !!! I have adjusted a few things according to our preference, you can definitely do the same.I promise you it tastes much better than it looks, photography is not too great today : the fam was too hungry to wait???

Let’s Get Started

Chicken Palandi has many versions but this one’s mine…We like to make it cheesy and more creamy.You can always adjust according to your preference.Most chicken palandi recipes use fried chicken but I prefer to pan fry them instead.You could definitely use fried chicken or even leftover chicken works well for this recipe.

I start by marination of the meat :

  • 1 kg meat cut into small pieces(with bone)
  • 2 tsp salt
  • 1 tsp kashmir chilli powder
  • 1 tbsp lime juice

Use a non stick pan and panfry them on medium high till you get the colour on both sides.Dont worry about having to check whether they might be under cooked because theyr gonna be cooking again when making the palandi.Also when theyr cut into tiny pieces, the meat cooks so fast already!!!

Remove the cooked meat and place in a bowl to rest while you prep the stuff for the palandi

Do not discard the oil that’s left on the pan.Use same pan to make the palandi.The flavours are unbelievable when you sauté onions in this same pan with the meat drippings!!!

For the Palandi you will need

  • 1/2 cup Coconut Oil/Ghee
  • 1 Onion sliced
  • 1 tbsp minced garlic
  • 1 tsp crushed ginger
  • Few curry leaves
  • 3 Capsicums sliced
  • 2 Tomatoes Sliced
  • 2 Green Chillies sliced

Spice Powders :

  • 1 tbsp Kashmir chilli powder
  • 1 tbsp Chilli Flakes
  • 1 tsp Black pepper powder
  • 1/2 tsp Tumeric
  • 1 Tbsp Roasted Curry Powder
  • 1 Tbsp Chilli Paste
  • 1 Tbsp Maldive Fish Flakes

Other ingredients :

  • Coconut Aminos (Healthier substitute for Soy Sauce)
  • Tamarind Pulp 1 tbsp
  • Blend together Milk,Curd,Cheese,Cashew powder
  • Fresh Coriander Leaves and Fried Onions for topping
  • Freshly sliced Onions Capsicums Tomatoes can be used for topping as well

Small Hack For Storing Ginger and Garlic

Method

Step One :

Saute onions and garlic,ginger in the same pan with meat drippings.Add curry leaves.Let it get nice and golden

Step Two

Add the spices in

Step Three

Add Tomatoes and Capsicums.Keep fire on medium high.

Step Four

Add Coconut Aminos,Tamarind

Step Five

This dish has to be cooked on medium high flame but make sure its not burning.If you sense burning sprinkle some water and make sure its fixed.

Next,add in the blended milk mixture

Step Six

You could totally omit the cheese if you’re not fans of cheese but my family loves cheese on anything!!!So we are very generous when adding cheese into a dish !!

Step Seven

Let this cook for as much or as little as you want the consistency to be

Then after plating sprinkle with fried onions and fresh coriander leaves

You could also use fresh onions and tomatoes but this time we served the fresh onions on the side

Serve Warm with your choice of Carbs

Served for kids with rotti, hubs and I had it plain….Sooo good !!!
