Maalu Means Fish & Paan Means Bread So “Maalu Paan”Is Also Known As “ Fish Bun”
Beautifully Baked Buns With A Peppery Fish Filling On The Insides:Yumm
Been Meaning To Post This Recipe For Awhile
For The Dough:
500g Plain All Purpose Flour
2 Tbsp Milk Pwd
1 Tsp Salt
4 Oz Melted Butter
One Whole Egg
Yeast 2 Tbsp & 2 Tbsp Sugar Mixed With 1 Cup Luke Warm Milk(Let This Bloom & Rise)
Mix The Yeasty Mixture Into The Dry Ingredients First,Then Add In The Rest Of The Ingredients One By One & Form Into a Smooth Dough.I Used The Stand Mixer But You Could Totally Do It Manually.Add More Water If Necessary.Make Into Small Sized Circular Shaped Balls & Place On An Oiled Tray Covered
Let These Dough Balls Rest For Atleast 45Min
In The Meantime Start Making The Fish Filling
I Used Fresh Boiled Fish,You Could Definitely Use Canned Fish.
Heat Some Oil,Add In 2 Finely Chopped B.Onions & Let This Get Light & Golden.Then Add In Curry Leaves,Cinnamon & Few Cardomoms,Mustard Paste,Salt,Tumeric,Extra Pepper,Chilli Flakes,& Mix Well.
Now You Can Add In The Flaked Fish & Mix Well.Let This Cook For Few Minutes & Makesure The Fish Is Well Coated With The Spices.
Next Add In 3 Boiled Mashed Potatoes & Fresh Green Chillies Sliced(Optional).Finally Mix In Corriander Leaves & Drizzle Fresh Lime Juice.
Time To Make The Buns.
Place Filling Fold Edges Well & Place In A Lined Baking Tray,EggWash & Bake In A PreHeated Oven @180’ For Atleast 20 Minutes Or Untill The Top Is Beautiful & Golden Brown.Sprinkle Sesame Seeds On Top If You Prefer.
